54 on Bath unveils an exclusive new Chef’s Table dining experience, curated by Executive Chef Donaldson Madubela. Launched last week, The Chef’s Table offers a setting to indulge in a nine-course menu, featuring a beetroot cannelloni amuse-bouche, quail with lemongrass broth, seafood and corn chowder, and lime-o-lade dessert, highlighting Chef Madubela’s passion for local flavours and culinary innovation.
Set within the heart of the Level Four Restaurant kitchen, the 54 on Bath Chef’s Table provides diners with a front-row seat to the culinary artistry and orchestration of the kitchen team. This dining experience is available each evening at 6:30 pm, accommodating a maximum of four guests per session.
Guests will embark on a journey through a curated menu that is a fusion of Mediterranean and South African cuisine, featuring a beetroot cannelloni amuse-bouche, moving through dishes like quail with lemongrass broth, seafood and corn chowder, and ending with the lime-o-lade dessert. A wine pairing option is also available.

After honing his skills at the International Hotel School, Chef Madubela embarked on a career that saw him refine his craft at establishments which include Mount Grace Hotel and Arabella Hotel, Golf and Spa. His tenure as Executive Chef at destinations such as Seychelles and Bazaruto Island has equipped him with an appreciation for diverse flavours and cultures.
Now, Chef Madubela brings his expertise back to South Africa, blending local ingredients with his international culinary experiences to create dishes that are both innovative and rooted in tradition. The exclusivity and tailored nature of The Chef’s Table necessitate prepayment of R1250 per person for the nine-course dinner and optional wine pairing at an additional R750pp. Reservations are accepted online only, ensuring a seamless booking process. Guests must complete their booking by paying the deposit within 48 hours; otherwise, the reservation will be automatically cancelled.
