AURUM RESTAURANT IN SANDTON has launched a new seasonal menu focusing on all things fresh, championing each ingredient on the plate in its own right.
Simplicity is the key, says MD, Paulo Santo. “The team have steered away from the hero-ingredient philosophy and instead, worked towards exalting all the ingredients on the plate. Our new menu will not just honour a well-marbled piece of meat or a fresh fillet of fish, but through technique and careful manipulation, to bring all elements of the dish to life.
Some of the key dishes to look forward to include a Beetroot and Artisanal Stracciatella Cheese starter; Prawn Risotto; and Ricotta Gnocchi. The star of the dessert trolley is the Aurum ‘Magnum Ice-Cream, in the form of a frozen caramel mousse, hazelnuts and dark chocolate.
“Changing the menu seasonally is a chance for our chefs to deliver new expression and for us to progress as a restaurant. It also allows for our team to develop, and for us to deliver new knockout showpieces for our patrons to indulge in,” says Paulo.
Aurum’s food is inspired by contemporary European cuisine and delivered with a South African touch. Dishes are restrained and simplicity is key in order to showcase the very best of local producers, farmers and artisans. Care is always taken to consider the coming months from a sustainability perspective and to strike a balance with food trends and guest expectations.
