Leafy Greens Café Kale Wraps

Ingredients
2 large flat leaf kale leaves
Raw veggie rice of your choice: made from turnips, cauliflower or sprouts
Thinly sliced carrots, cucumber, red pepper or baby marrow
Fresh rocket
Sliced avocado and tomato
Sauerkraut
Hemp seeds
Goji Berry Dressing
Ingredients
3T organic Goji berries, soaked overnight, blended with one cup of water and strained through a nut-milk bag
1 cup olive oil
2T apple cider vinegar
1T organic baobab powder
1 garlic clove
1T honey or vegan sweetener
1/2t rock salt
Method
Blend the dressing ingredients together until smooth. Fill your kale leaves with rice, sauerkraut, herbs and vegetables, and drizzle with the dressing or dip. Roll up and serve.
